These mini gluten-free coconut lime cakes are a perfect balance of sweet, tangy, and tropical flavors. The combination of coconut and lime brings a refreshing and indulgent treat without the gluten!
Ingredients (Makes 6 Mini Cakes):
For the Cake:
1/2 cup (60g) shredded coconut (unsweetened)
Zest of 1 lime
1/4 cup fresh lime juice
1/4 cup (60g) coconut oil, melted (or any vegetable oil)
1/2 cup (100g) granulated sugar (or coconut sugar)
1/2 cup (120ml) coconut milk (or any dairy-free milk)
2 large eggs (or flax eggs for a vegan option)
1 cup (120g) gluten-free all-purpose flour (make sure it has xanthan gum)
1 tsp baking powder (gluten-free)
1/4 tsp salt
For the Lime Glaze:
1/2 cup powdered sugar
1-2 tbsp fresh lime juice
